Katya’s is dedicated
to the development of an environmentally and socially responsible menu. We are striving to create lasting and
mutually beneficial relationships with local farmers and businesses. We select as much of our produce and meats as
possible from local sources. Any ingredient
that cannot be obtained locally is procured from community businesses. In the coming months and years Katya’s will
move ever forward toward a completely local, seasonal and sustainable
menu. This is a gradual process and we
appreciate any suggestions and support our guests have to offer.
Katya’s does
not use any genetically-modified organisms, refined corn products or
hydrogenated oils in the preparation of our food. We avoid the use of soy and canola oil as
much as possible. We are happy to
accommodate any dietary restrictions our guests may have.
On Food & Wine
Pairings…
Beyond
drinability, there are no rights or wrongs in the selection of any wine. Wine, like food, is a matter of personal
taste. Food and Wine pairing are best
made by evaluating the ingredients in a dish.
Consider how their flavors affect the dish, for instance the acid
content of tomato-based recipes or the hot, spicy flavors of chiles. Cheese, eggs and cream give a dish richness;
grilled foods add smoky characteristics. Wine must respond to food, and as
these flavors and textures change, so should the wine. You can’t go wrong with a good drinkable
wine, and experimenting is a pleasure in itself.
